Cardamom Energy Bites

These delicious energy bites are made of dates and nuts with the addition of cardamom, maca and freshly ground coffee. Full of fibre, carbs protein and good fats, they are great as a takeaway snack, post-workout nibble or easy to make nutritious dessert.

Ingredients

260g soft dates (Medjool or Mazafati dates work the best)
80g almond butter
40g cacao butter
1 tsp maca powder
1 tsp ground cardamom
1 tbsp freshly ground coffee beans
80g hazelnuts
80g almonds
80g pecan nuts or walnuts

 

Method

You will need a square 15cm brownie tray

  1. In a food processor bowl process hazelnuts, pecans and almonds until broken down. Set to one side.

  2. Blend the rest of the ingredients in a food processor until smooth. Add the processed nuts and blend together until well combined.

  3. Line the bottom of a 15cm square brownie tray with cling film or reusable liner. Transfer the mixture into the prepared tin and press well. Smooth the surface with a palette knife. Set in the freezer for few hours. Cut into bite-size pieces.
